Hi.
I am medical doctor, and research professor of japanese univ.
Recently, I made this bike with a pair of oval gears.
This one was designed for one-leg disabilities :), as you imagined.

My right knee's range of motion is only 30 to 60 degrees after a PJI a few years and I can no longer ride a bicycle, my left knee works fine. I wonder if this could be adapted to my Trek hybrid for recreational riding? The southern Mooselake Manor is on flat land so need for low gear

gear ratio can be changed mechanically.

E-assist is easy solution, but not for sports riding.
and, most important thing is set up for each person.
all dimensions should be re-considered.
thus, i cannot make specific comments for your case.
however, i FEEL you can ride some kind of bicicyle after rehab and training.
technically possible. but "who makes it?".... that is the problem...
